MONKFISH AND PRAWNS IN BUTTERY PERNOD SAUCE

Serves 4
Preparation and cooking time approx. 20 minutes

Ingredients:

50g (2oz) Lurpak Slightly Salted butter
1 Tbsp. olive oil
1/2 red onion, very finely chopped
1 clove garlic, crushed
454g (1 lb) monkfish, cut into 2.5cm cubes
225g (8 oz) cooked, shelled tiger prawns
4 Tbsp. Pernod
2 Tbsp. chopped dill
Salt and black pepper to taste

Method:

1. Heat 15g of the Lurpak Slightly Salted butter with the olive oil in a large non-stick frying pan.
2. Sauté the onion and garlic gently until softened, add the fish and cook over a medium heat until just cooked through, taking care not to break up the fish by too much stirring.
3. Add the dill and Pernod to the pan and then the remaining butter in small pieces, allowing the butter to melt and create a lovely buttery sauce. Season to taste and serve with a selection of seasonal vegetables.

CHOCOLATE AND CRANBERRY CHEESECAKE

Preparation and cooking time approx. 1 hour

Ingredients:

50g (2 oz) Lurpak Unsalted butter
100g (4 oz) finely crushed amaretti biscuits
500g (1 lb 2 oz) soft cream cheese
100g (4 oz) caster sugar
142ml (5 fl oz) soured cream
3 medium eggs
50g (2 oz) plain flour
100g (4 oz) melted chocolate
2 Tbsp. cranberry sauce
Sifted icing sugar or cocoa to finish

Method:

1. Melt the Unsalted Lurpak in a pan and then stir in the amaretti biscuits. Press into the base of a greased 20cm (8") loose based cake tin and leave on one side.
2. Beat together the soft cheese and sugar until smooth and then add the soured cream, eggs, flour and melted chocolate, mixing well.
3. Stir in the cranberry sauce and pour into the tin.
4. Bake in a preheated oven, Gas 2, 150 C for 45 minutes. Turn the oven off and allow the cheesecake to cool in the oven for about an hour and then chill until ready to serve.
5. Serve dusted with icing sugar or cocoa.
